Pizza is a big deal to everyone. I’m pretty sure I’m not teaching you anything here, but when it comes to pizza making each region of the world has a different take on it. Having lived both in North Africa and North America, I can tell you that Seafood Pizza is by the most popular pizza in Morocco. Not a surprise really, when you take into account the fact the Moroccan diet relies heavily on seafood.
Once you make this pizza, I’m sure it will become one of your favorites too.
An Easy Pizza Dough Recipe
Whenever you are making pizza, there are 2 lessons to remember.
First lesson: do not rush this
Patience is very rewarding for anything that needs to rise (dough) and you want to make sure that you have a good 2 hours ahead of you to get this right
Don’t worry, though, during that time you won’t be doing much, except maybe watching a football game while your dough is rising, if you’re like me
Second lesson: you want good quality bread flour
If you like ’em thick (the pizza crust…), and you’re aiming for a crispy outside and fluffy inside, just go with the bread flour
All purpose flour works too, but remember, good quality is important for your pizza. That said here is what you are going to need :
- 2 cups of bread flour plus some for dusting
- 1 packet of yeast
- 3/4 cup of water
- 1 tbsp of olive oil
- 1 tbsp of salt
- 1 packet of yeast
And here is how you make your pizza dough:
In a separate container, add the yeast, olive oil, water and let it bloom for 4-5 minutes. Add your flour and salt to the bowl and turn up your stand mixer on low-speed for 5 minutes, then on high speed for 8 minutes or until you get a nice sticky dough. Oil your hands thoroughly and remove your pizza from the stand mixer. Place it in a well oiled bowl, cover with a towel and let it rise for at least 1 hour or until it doubles in size.
If you don’t have a stand mixer, you can follow the same method, using your hand and a large bowl (or surface if you got mad skills).
Important note: This pizza recipe makes for one very large pizza or 4 small ones. In this particular recipe, we are going to make 4 small pizzas.
How to make Moroccan Seafood Pizza
Getting the pizza dough right is half the work, if not most of it. The topping is just as important though. You don’t want to overcrowd your pizza with toppings, or put things that don’t belong together. That said, here is how I built this pizza:
- Roll your pizza dough, using a rolling pin or your hands, until you get a circle that has just about 10″ diameter. Using a rolling pin will allow you to have a pizza with even thickness.
- Use 1 1/2 tbsp of your favorite marinara sauce. You can use your favorite store-bought brand, or a homemade recipe. If you don’t have a homemade recipe, try this one. Spread your sauce using the back of the spoon until your pizza is well covered.
- I used a frozen seafood medley that I defrosted in water 30 minutes prior to assembling the pizza. Top with a generous serving of low-moisture mozzarella and olives.
- Bake @450F for about 15 minutes or until the cheese turns golden brown and bubbly. Top with a dash of pepper, fresh basil and by drizzle 1 tbsp of olive oil on the pizza.

Moroccan Seafood Pizza
Ingredients
- 1 pizza dough divide into 4 if you want to make 4 small pizzas.
- 1 1/2 tbsp marinara
- 1 cup frozen seafood medley defrosted in water and drained
- 1 cup low-moisture shredded mozzarella
- 1/3 cup pitted green olives roughly chopped
- Few basil leaves
Instructions
